Harold's restaurant, Perilla, opens... Perilla, Home to Thoroughly Modern Harold Filed under: Greenwich Village, Eclectic, American — Nosher @ 10:33 pm Reality television in the mid-00’s seems to be all about inverting traditional sequences of events. Not too long ago, a famous chef worked slowly to build a reputation among patrons, peers, and the press, and then and only then made the leap to the small screen. Even Iron Chef contestants both here and in Japan all followed this formula to a person. Then along came Bravo TV’s brilliant Project Runway, which in one quick whipstitch reversed the polarities on vocationally-driven notoriety. Suddenly, it was possible to have one’s moment in the sun first and then follow it up with a career. Enter Harold Dieterle, the hands-down winner of the first season of Project Runway’s sister program, Top Chef. A year and $100K worth of seed money later, he returns to his roots to open his first restaurant just a mile or two from his pre-TV sous cheffing gig at The Harrison, poaching former operations manager Alicia Nosenzo along the way. Given his background, you might expect the opening of Dieterle’s Perilla to have been a klieg light and paparazzi affair, yet instead, the restaurant just put out its shingle a few weeks ago and opened for business. The understated message comes across loud and clear: Perilla is not about hype, despite the provenance of its chef. Late last week, HungryMan, our friend Matelot, and I stopped by Perilla and got a chance to see just how Dieterle was putting his talent into action. Before we even entered the restaurant, however, HungryMan and I had a long conversation about the menu posted outside. The influences are legion–seasonal ingredients, Middle European preparations, modern American combinations, and a few Asian-inspired twists as well–slightly schizo, but not surprising in a restaurant named for an herb that itself has several different names (shiso, perilla, Chinese basil). And the wide ranging menu works well, making it possible to have a light meal or a rather hearty one without resorting to off-menu requests. We were also heartened by the surgically brief wine list, which not only featured more than a few bottles in the $30-45 price range but also offered a number of seasonally ideal rosés. As we drank one of these very bottles–the Italian lagrein-based Muri-Gries ($34)–we started in on our first course. Everyone’s clear favorite was Matelot’s beef carpaccio with arugula, shaved parmesan, and a vinaigrette made from capers and preserved Meyer lemons (pictured above, $10)–essentially an updated version of the original Harry’s Bar preparation, served sushi-style in rolls buttressed by a few leaning shards of aged cheese. My roasted octopus salad ($10) was nearly as good, and benefited from the interplay of textures between the tender octopus and the crisp shaved fennel. I did wish I could have tasted the heirloom tomatoes in the vinaigrette a bit more, but this did not keep the dish from still being very successful. HungryMan’s crispy pork belly ($10) was also wonderful, rich and aromatic with its arc of banyuls-vanilla gastrique, but we all found the minute portion a surprise, given the ample size of our other two starters. Arriving at some kind of portion-size equilibrium needs to be a priority for Perilla, as this same issue reappeared with our main courses and again at dessert. With such a wide-ranging menu, the calculus involved in evening out portions is obviously complex, but striking that balance is well worth Dieterle’s time. This is doubly true when, as our trio of well-executed mains proved, there seem to be very few other problems in evidence. HungryMan’s grilled rack and breast of lamb ($29) was a perfect example–cooked exactly as requested and paired with a savory parlsey root purée and meltingly soft caramelized cippolinis, this dish could easily become a signature item for Perilla. Equally fine was Matelot’s sautéed skate wing ($20, pictured on Flickr), cooked simply, yet accompanied by a wild trio of watermelon pickles, hibiscus broth and Thai basil. This dish was all about the interplay between the crispy fish and its racy, floral companion items, and it wound up being a real charmer. I selected one of the evening’s specials, the softshell crabs ($30, also available as an appetizer), which came dredged in a light batter and fried crisp, with a cherry tomato and green salad alongside. It was the simplest of the dishes we ate that night, but also one of the best–restraint with exotic flavors and pairings being the reason why the crabs soared; it is quite clear that Dieterle knows when to add flourishes like pea tendrils and Okinawa yam gnocchi, as well as when to keep things simple. Speaking of exotic ingredients, you may be wondering where the restaurant’s eponymous herb appears on the menu. We found it in only one dish, the sticky coconut cake with frozen perilla yogurt ($8). We loved the astringent, herbal flavors of the little frozen perilla quenelle and remarked on how well it went with the moist, sweet cake. But the portion was again far too small and completely out of line with the much more generous lemon fennel doughnuts (also $8) we watched another table consume lustily. No matter–we are just happy to see talented former Chanto pastry chef Seth Caro finally installed in a restaurant where customers might actually order dessert. For the sticklers, perilla also appears in one of the restaurant’s bespoke cocktails, a version of the French 75 made with gin, lemon juice, shiso, and finished with prosecco. It is so refreshing that we think Caro might want to consider turning it into a boozy summer sorbet. If not this year, then perhaps next. Given Perilla’s precocious sophistication–it feels nothing like a first restaurant–we fully expect it to be around then. And if the early indications are to be trusted, Harold Dieterle won’t need another 15 minutes of fame to keep this business afloat. Ok, I can agree that Howie has had some good moments but I don't think he works well with others unless he is in charge. Even then, what I have observed is his communication with others isn't on the level he would need to run a kitchen. I also hate seeing him sweat over the food. yes, its hot but wear a sweat band and use a towel to wipe your face!
I would love to taste those cheesy grits. Such a comfort sounding food yet elegant to serve at a nice restaurant.
I agree. Howie should not win this competition. He is not a leader. But neither was Sara, so head to head I go by their cooking and their success to date. And to me, Howie leaves her in the dust in that respect.

I am confused......this week Food Network Canada premiered Top Chef.....and some of the names you mentioned sound familiar.......but it sounds like you are further along in the season......the first/premiere episode.....had 4 guys in the bottom......and the one let go was the chef who's father committed suicide.....and there was a guy with a mohawk in the bottom 4 as well......they had to cook with alligator, snake, frogs legs etc etc....and one guy didn't have emough time to plate his frogs legs and he was in the bottom 4........is this the same show?? 
It is the same show, but we started in June.

She had to do meatloaf, and really screwed it up.......and she insulted the judges by saying something like, "I know how you Americans like ketchup," in a derogatory manner.....or so the judges said. I didn't think she was a smarta$$ at all. But her dish did not look appetizing.
It is about the 3rd or 4th show when she leaves, I think.

I LOVE ketchup. Just thought I'd share. Oh, and I'm a (fairly recent) American citizen whose lived in the US most of my life, who was born in Canada and raised by Scottish parents.  I was discussing the final group with a friend yesterday and it is a pretty mixed bag. Monk, obviously this is spoilerish for you, so WARNING! WARNING!... Dale has been pretty consistent but has kind of a crappy attitude and doesn't seem to take the criticism much to heart. Hung is Dale times 10 and thinks his shiitake don't stink. I'm sick of how Hung is always right and EVERY SINGLE GUEST JUDGE is wrong, doesn't have vision, doesn't get it, etc, etc, ad nauseum. The sad thing is, I think Hung has made some of the best dishes on the show, but he just can't accept that his mis-fires are ... mis-fires. Well managed, Hung will be very successful. CJ has been pretty middle of the road, not doing anything horrendously wrong, not doing anything particularly great. He seems to have a good attitude and a pretty easy-going manner so I think he'll make it to the end. Brian seems a bit clueless to me. He doesn't seem aware of his own flaws, even when they're pointed out to him. He's done pretty well so far, but has been called out twice now, for service in the restaurant challenge, and now for leadership. Add to that his arrogant blunder in the American classics challenge (when he used lobster even though they said the dishes needed to be low cholesterol but he went for it because he had immunity), I think Brian will go soon. Casey has kinda' been a mess. I like her spunk and attitude but she's made a LOT of blunders...just fortunately, others have blundered worse than her and she's been spared the ax. I like her though and if she can get through the next couple of challenges without making major screw ups, she has a good shot at the finals. Sara was not a fave of mine. She seemed to be coasting but also hard nosed, bossy and opinionated. But it all came together when she showed her effective leadership in the last challenge, particularly where it came to Howie, who is difficult to manage, and I think she earned his respect. Then she made the call this ep to toss the mousse when it wasn't working, something the chefs are always chastised for NOT doing (if it doesn't work, don't serve it). I think Sara's got a spot in the finals. So, I see as next to go: Brian or Casey (maybe...it's up to her) Final four: Dale, CJ, Sara, Hung (like Marcel last season, they'll want the "villain" there until the end). Final two: Tough call. Sara or CJ vs Dale or Hung Winner: Sara. I think this show would love to crown a female Top Chef.

SPOILER**************************************************** I'll miss CJ, too. I think he was the nicest and funniest person their if not the best chef. I was really hoping that Hung would screw up somehow, but he didn't. As a judge, I would have kicked him off just for his stinky attitude. I really came to depend on CJ's funny comments and facial expressions. He reminded me a little of Bill Murray, unfortunately this isn't Last Comic Standing. I'd eat at Cj's reataurant because I like him; I'd avoid the veggies and the tuna dishes, of course. Even if the food was earth-shakingly great, I would never eat at Hung's restaurant just because he's a jerk. I'm not giving him my money.  Right now, I'm pulling for Mr. Roosterhead (can't think of his name right now). He's been in the top a lot AND he's managed to be a nice person. I still miss Tre. I will never miss Howie. Isn't Howie usually a happy person's name?

I fell asleep before the end......I'm so sorry it was CJ. First Tre, now CJ.....what are the judges thinking? How many times did Howie screw up before he was sent home? And I wonder if he would have gone last week if he hadn't volunteered. It would have probably been Brian.
Well, I guess now, I'm hoping for a Casey, Dale, Sarah, or Brian F2 or F3. I don't like how Hung has rebuked all of the judges when they don't like his dishes. He says they don't have 'vision'......maybe they don't like the TASTE!!!!!
Brian is a cutie, but he does seafood for everything.....even in his breakfast, he used lobster. Sarah is good, but she comes across as a little b!tchy. Dale has had some good dishes, but his mistakes have been huge. Casey has been all over the place. She really should have been the one to leave instead of Tre. But I like her.
Guess I'll vote for Tre and CJ as fan favorite.........

We did, but I can't find my own post. The food was incredible. Harold was busy working the line on this particular Saturday evening instead working the front of the House. My son asked our server if we could give our compliments to Harold, server said sure but you will have to go into the kitchen, and we passed since it was obvious how busy he was. The tab for the evening was $185 which included wine, a couple of mixed drinks, and dessert. We had a side of Faro Risotto.

My but that menu looks very, very interesting. Some foods I don't recognize but lots of adventure available. I could see me happily munching on an appetizer--any of the fish dishes.the pea salad, the beef--plus a side dish for my meal. Exclude the raw fish from that list, I really tend to like my fish and meat cooked. Then return the next night and try to choose between the halibut, the skate wing, the lamb, the duck, the beef...sigh. I remember many years ago on one of the Iron Chef programs they pulled a guy from the audience to sit and taste also. I have had fantasies of being able to just sit there and taste the entries prepared by the chefs in these contests!!! I'd love to sit through a challenge in to chef and get to taste the results. Although I have to say in the breakfast challenge, I really cannot eat an egg with a runny yolk.  Really, my stomach just churns. So much for my palate.

She was with a small group of women who were asked to leave the bar over Labor Day weekend & then about 10 young people followed the women & began screaming anti-gay epithets, spitting on them, and then beating them. The small blurb did not say how she was doing.
What the hell is wrong with people?!
That's just appalling, but then when people hold men like ED as Heroes, what can we expect?

I thought it was funny how the "undercooked chicken" progressed. When eating, Gail commented it was "undercooked". At judge's table, she escalated it to "almost raw". Then Padma upgrades it by saying "it was raw!" If the show went on any longer, someone would have been commenting that the chicken got up and walked off of Gail's plate... Based on last night, the right person did go home and I wasn't expecting Sara in the finals, though she's really the only one who was a proven leader during the series. Still shocked to see Brian hanging in...he's been below average most of the competition and his dish may have been good but it looked horrible. Shocked that there was no comment on presentation. Hung is Hung, no getting around it, but he does have some amazing skills. I expected him in the finals and am not surprised to see him there. I was also pretty much expecting Dale there and think he's earned his spot. But I too am rooting for Casey. Great combo of skills, humility and enthusiasm. Would love to see her win and I'm sure the show is pulling for her too to crown their first female Top Chef! Go Casey!

You nailed it...Hung is just Hung and most of the time I can deal with his over-inflated ego, but when he cries to the judges that nobody helped him plate his dish, he makes my skin crawl. The man had an extra 1/2 hour. (I didn't even fault him while, during the quickfire, he didn't tell the other chefs how he made the potato thingy, why should he?) I don't know, I think I would be happy with any of the final 4 winning. I would prefer Casey/Dale, but eh, they are all good! And Brian's mossy looking chicken, while maybe tasty to them, was so greeny looking it reminded me that I should have mowed my lawn.

It was esp. interesting to hear how his father immigrated and then worked hard to bring his family over. I found myself thinking now that's the way immigration should be and look what has happened with the son, he's on a TV show where millions are watching him cook and he has this fantastic chance to achieve his dream and to show his father how well he has done with the hard work. It was a good move by the show to give us this information late in the season and change our feeling about Hung.
Yes, I was very sad to here Dale tell about what has happened to him this last year and how he was totally demoralized. But look at him now, he's definitely back in the saddle again. (cue western music)
Casey's dish did seem a bit weak, esp. after she said she had cooked elk before. But her trout in the quick fire sounded fantastic! What I am in awe of most is how these chefs can come up with a dish and get it prepared in under 30 minutes. It takes me hours to do the simplest things.

Day 2 is on and the sous chefs are retired. The Top Chef finalists are on their own. Hung worries about the fact that the judges don't think his food has soul. He says that he has soooooo much soul. Casey says she has too much to do, but she's pushing through to complete it. Hung states that he's doing fine without Rocco today. Dale explains to Tom how much trouble he has had with his gnocchi at the high altitude. Casey is having trouble with the time on her pork belly in the oven. Tom looks concerned. Hung explains his dishes to Tom. Hung thinks that Tom gives him a "your nuts!" look as he is talking.

...because a few weeks ago in TV Guide there was an article about the next season being filmed...in Chicago!

Is this the season of the villain on reality TV? First Dick on Big Brother, now Hung (I know Hung isn't in the same vile league as Dick, just that they were both their shows' villain). So I guess Dave is going to win Survivor?
Agreed...he was the best chef...but had the worst attitude...so for me....the best "person" didn't win.....should have been Dale or Casey......
