The All*Star challenge was really fun. I can't wait for Season 3 to get started, although there seemed to be an awful lot of arrogance in the cast.

I really enjoyed the challenge too! Nice way to do an "All Stars" - short and sweet. We got to catch up with the contestants and had them do their thing in an hour. Nice!

And Marcel hasn't changed a bit.

It's tonight, it's tonight!

The best cooking reality TV show on the tube, hands down.

Harold's restaurant, Perilla, opens...

Perilla, Home to Thoroughly Modern Harold
Filed under: Greenwich Village, Eclectic, American — Nosher @ 10:33 pm
Reality television in the mid-00’s seems to be all about inverting traditional sequences of events. Not too long ago, a famous chef worked slowly to build a reputation among patrons, peers, and the press, and then and only then made the leap to the small screen. Even Iron Chef contestants both here and in Japan all followed this formula to a person. Then along came Bravo TV’s brilliant Project Runway, which in one quick whipstitch reversed the polarities on vocationally-driven notoriety. Suddenly, it was possible to have one’s moment in the sun first and then follow it up with a career.

Enter Harold Dieterle, the hands-down winner of the first season of Project Runway’s sister program, Top Chef. A year and $100K worth of seed money later, he returns to his roots to open his first restaurant just a mile or two from his pre-TV sous cheffing gig at The Harrison, poaching former operations manager Alicia Nosenzo along the way. Given his background, you might expect the opening of Dieterle’s Perilla to have been a klieg light and paparazzi affair, yet instead, the restaurant just put out its shingle a few weeks ago and opened for business. The understated message comes across loud and clear: Perilla is not about hype, despite the provenance of its chef.

Late last week, HungryMan, our friend Matelot, and I stopped by Perilla and got a chance to see just how Dieterle was putting his talent into action. Before we even entered the restaurant, however, HungryMan and I had a long conversation about the menu posted outside. The influences are legion–seasonal ingredients, Middle European preparations, modern American combinations, and a few Asian-inspired twists as well–slightly schizo, but not surprising in a restaurant named for an herb that itself has several different names (shiso, perilla, Chinese basil). And the wide ranging menu works well, making it possible to have a light meal or a rather hearty one without resorting to off-menu requests. We were also heartened by the surgically brief wine list, which not only featured more than a few bottles in the $30-45 price range but also offered a number of seasonally ideal rosés.

As we drank one of these very bottles–the Italian lagrein-based Muri-Gries ($34)–we started in on our first course. Everyone’s clear favorite was Matelot’s beef carpaccio with arugula, shaved parmesan, and a vinaigrette made from capers and preserved Meyer lemons (pictured above, $10)–essentially an updated version of the original Harry’s Bar preparation, served sushi-style in rolls buttressed by a few leaning shards of aged cheese. My roasted octopus salad ($10) was nearly as good, and benefited from the interplay of textures between the tender octopus and the crisp shaved fennel. I did wish I could have tasted the heirloom tomatoes in the vinaigrette a bit more, but this did not keep the dish from still being very successful.

HungryMan’s crispy pork belly ($10) was also wonderful, rich and aromatic with its arc of banyuls-vanilla gastrique, but we all found the minute portion a surprise, given the ample size of our other two starters. Arriving at some kind of portion-size equilibrium needs to be a priority for Perilla, as this same issue reappeared with our main courses and again at dessert. With such a wide-ranging menu, the calculus involved in evening out portions is obviously complex, but striking that balance is well worth Dieterle’s time.

This is doubly true when, as our trio of well-executed mains proved, there seem to be very few other problems in evidence. HungryMan’s grilled rack and breast of lamb ($29) was a perfect example–cooked exactly as requested and paired with a savory parlsey root purée and meltingly soft caramelized cippolinis, this dish could easily become a signature item for Perilla. Equally fine was Matelot’s sautéed skate wing ($20, pictured on Flickr), cooked simply, yet accompanied by a wild trio of watermelon pickles, hibiscus broth and Thai basil. This dish was all about the interplay between the crispy fish and its racy, floral companion items, and it wound up being a real charmer.

I selected one of the evening’s specials, the softshell crabs ($30, also available as an appetizer), which came dredged in a light batter and fried crisp, with a cherry tomato and green salad alongside. It was the simplest of the dishes we ate that night, but also one of the best–restraint with exotic flavors and pairings being the reason why the crabs soared; it is quite clear that Dieterle knows when to add flourishes like pea tendrils and Okinawa yam gnocchi, as well as when to keep things simple.

Speaking of exotic ingredients, you may be wondering where the restaurant’s eponymous herb appears on the menu. We found it in only one dish, the sticky coconut cake with frozen perilla yogurt ($8). We loved the astringent, herbal flavors of the little frozen perilla quenelle and remarked on how well it went with the moist, sweet cake. But the portion was again far too small and completely out of line with the much more generous lemon fennel doughnuts (also $8) we watched another table consume lustily. No matter–we are just happy to see talented former Chanto pastry chef Seth Caro finally installed in a restaurant where customers might actually order dessert. For the sticklers, perilla also appears in one of the restaurant’s bespoke cocktails, a version of the French 75 made with gin, lemon juice, shiso, and finished with prosecco. It is so refreshing that we think Caro might want to consider turning it into a boozy summer sorbet.

If not this year, then perhaps next. Given Perilla’s precocious sophistication–it feels nothing like a first restaurant–we fully expect it to be around then. And if the early indications are to be trusted, Harold Dieterle won’t need another 15 minutes of fame to keep this business afloat. In fact, the media attention may just come the other way around this time. Go figure.

Perilla, 9 Jones Street (between West 4th and Bleecker Streets), 212-929-6868.

Sounds like Harold is doing very well for himself.

I watched last night's show, and I must say, there is some real talent this season. There is also a lot of attitude going on. I really felt sorry for the one who went home....Clay, was it? It was obvious he was not on the same level as Tre and Hung, who, I think are the ones to watch.

This should be a really good season.

But it was fun anyway! Although I was very sad to see Sam and Cliff as I really thought those two would be in the finals with Cliff winning.

Anyone still watching? I am tired of Howie. His time was over about 3 challenges ago and he really needs to go. I am still thinking Tre is the one to beat. Hung is also past his time to go. But I do like the very tall gentleman and the one who did the raw bar for the winning team last night. Very good interaction with the crowd and a very well planned service. While the women did sound a little whiny I did feel sorry for them cooking in dress up shoes and yes, I fully understood about trying to cook and having your breasts hanging out in the kitchen.

Don't we all! I can't tell you how many times I've mentioned I liked a man only to be told he wasn't my "type".

I'm at the point now if a man dresses well, speaks intelligently and is kind I just figure he isn't my "type".

I hated to see Sarah go over Howie....He has been in the bottom every week but one, I think.....Right now, I like Tre and CJ (the really tall guy) and I like Casey, but I don't think she will be around much longer. I was really thinking a woman might win it this time, since the previous 2 had male winners, but the women keep leaving....

I thought Howie would go, but what I think it came down to was that Howie doesn't give up but Sara did. A Top Chef doesn't quit. JMO

I'm glad Sara went. She was b*tchy as soon as they found out there was a challenge. What they showed on TV didn't show me that Howie was acting like an ass on that challenge. She was acting more like an ass to me.

I think Sara also made too big a deal of him saying "she is the baby of the group"....she was! And later in her goodbye, shey says, "I'm only 25." Well, yeah, that is what I think Howie was talking about!

Though personality wise I would have liked to see Howie gone, in competition terms, Sara hasn't done anything, IMHO, to shine. Howie's been all over the place (like Hung) but has had some shining moments.

Ok, I can agree that Howie has had some good moments but I don't think he works well with others unless he is in charge. Even then, what I have observed is his communication with others isn't on the level he would need to run a kitchen. I also hate seeing him sweat over the food. yes, its hot but wear a sweat band and use a towel to wipe your face!

I would love to taste those cheesy grits. Such a comfort sounding food yet elegant to serve at a nice restaurant.

I agree. Howie should not win this competition. He is not a leader. But neither was Sara, so head to head I go by their cooking and their success to date. And to me, Howie leaves her in the dust in that respect.

Agreed Kev. I would have given Sara one more week just because Howie was being so agressive. She failed by giving up; he failed by not working with the others to meld a team together.

So next week we can say good-bye to Howie????

Or maybe Hung. he really isn't that good but seems to dodge the cut each week.

Maybe because he's running around the kitchen so fast, no one can catch him......

I know Sara was bound to go sometime, she is not a Top Chef. I just don't like Howie's attitude and would have liked to see him leave this week. He does really good when it is an individual challenge, but he sucks on team challenges......Personally, I wish they wouldn't do so many team challenges anyway.

This season is so much better then the last one. I think Tre is the front runner as of now. He's food is consistently good and he's only been in the bottom once for an elimination challenge. I think Brian could be a darkhorse, but I wish he'd make something other then seafood; just to show variety.

For me personally I think it should have been Howie going home. He's too much of a complainer, and likes to put blame elsewhere & it seems like he never has enough time.

Most definitely next week will have the judges expecting more. Just from the previews it looks like the one going home may be someone totally unexpected.

Not CJ or Tre!!!!!!!

I don't know him really well, but if he is anything like his brother my husband than yeah he's a good cook.

The mannerisms is what I saw that were the same, and their voices are similar.

Oh it was such a bad night for the dream team! BAd cooking, lack of intensity and horrors of all, Tre did not shine as I expected him to shine. What happened? I really think he was one of the very best cooks there but I knew about thirty minutes into the show that he would be the one to go. he had class though. he went out admitting his mistakes and realizing he would be a better chef for what he had learned. Sara was surprising in a very positive way. She stepped up and took over the kitchen as one would expect from an executive chef. She even had Howie towing the line. GO GIRL!

Now please, please do not have Hung as the Top Chef!

They have toned down Hung lately in editing so I'm thinking he could very be at the end. Predictable, but I'll still watch.

Both my husband & I were disappointed in seeing Tre go.

I hope next week Howie is finally going.

UG about Stephen being on the show again. Not entertaining to hear him ramble on again, but I knew it was going to be him as soon as then announced what they were going to win for the quick fire challenge.

I was so sad to see Tre go. I really wanted him to win, but he had a bad night. I can see Sara making it to the finals. A female has never won, so this may be her year. I hope Howie goes next week, but I think he will probably hang around a bit longer. I don't see Casey staying much longer. But I never guess these things right. The only season I had right was Harold's win.

Stephen makes me cringe when I hear him talk. I was not excited to see him again.........

I do believe Tre will end up being one fine cook. his experience on the show will be used by him to better himself. I wouldn't mind eating in his restuarant if he kept to his simple style. I think that was really his strength, being very simple in his approach but combining his flavors well.

Tre is a class-act indeed. I love how he just avoided the drama- and his food seemed innovative without being over-the-top or stuffy.
I'm actually coming around when it comes to Hung - he has taken the high road a lot recently- perhaps it is the editing???

I know what you mean, I've called Howie so many times and still he remains!!!! I would have booted him just for all the sweating he was doing into the food. Wear a headband dude!

Also Hung, his maniacal racing around the kitchen has endangered people and his food has not been that well received by the judges. But he remains. It almost seems that those that shine early on, do not make it to the end while the middle of the pack folk survive longest and get the benefit of growing more as they compete.

I'm also surprised that Sari is still there. She looked extremely weak early on but this last challenge she really ran that kitchen very, very well.

Good episode. I'm glad Howie is gone, but I admire him for wanting to bow out of the competition so no one else would suffer. Didn't they let someone leave last season??? I really thought it might be a double elimination with the way the judges were going.

I really like that Chef Tom is in the kitchen more and providing some really good insights and commentary. Am I the only one who thinks he's hot???????? He has a Sean Connery thing about him.........

It is the same show, but we started in June.

Thanks!!

Glad to see this guy gone this week.....the previews for the next episode I would see looks like he was an a$$...

I really like the girl who won the very first quick challenge (the amuse bouche)....I think she's Australian.....they had to create a small dish from a buffet table.....it was the first episode.....

You are not alone, Nikki. I think Tom is hot too.

I thought the judges were way too hard on the chefs this go around for the time & amount of $$$ they were given. I also think Howie was an easy scapegoat for the judges & the other chefs. I'm surprised they said it wasn't Howie's choice to leave, cause someone did that last season, and they said, "okay, we'll take that."

I think the guest judge for next week is one they had on last year....and he is a real hard ass!

No, she made an early exit. They had to take an American comfort food and update it. She had to do meatloaf, and really screwed it up.......and she insulted the judges by saying something like, "I know how you Americans like ketchup," in a derogatory manner.....or so the judges said. I didn't think she was a smarta$$ at all. But her dish did not look appetizing.

It is about the 3rd or 4th show when she leaves, I think.

Anytime, Monk.....right now, my faves are Casey and CJ. Its time for a female winner, so Casey may take this. But you never know this season. The judges are much more demanding/hard to please. I really thought Tre had it in the bag until last week. Brian could be a contender, too. Heck, all of the ones left are good......but Hung gets on my nerves.....

My only gripe about the show is how the judges haven't taken into consideration how the chefs have done on an overall basis. Everyone has 'off' nights, even in restaurants. So when they let Tre go last week for not being an effective leader in the kitchen, they didn't take into consideration what he has done thru-out the comp. Even Harold may have had a hard time getting past the judging this season.

I thought about that in relationship to Tre. He had been so strong but didn't do well one night. Then compare that to hung who really annoys me and really has been what I consider mediocre all the contest. He's bland and needs seasoning. I'm hoping for CJ now.

I LOVE ketchup. Just thought I'd share. Oh, and I'm a (fairly recent) American citizen whose lived in the US most of my life, who was born in Canada and raised by Scottish parents.

I was discussing the final group with a friend yesterday and it is a pretty mixed bag. Monk, obviously this is spoilerish for you, so WARNING! WARNING!...

Dale has been pretty consistent but has kind of a crappy attitude and doesn't seem to take the criticism much to heart.

Hung is Dale times 10 and thinks his shiitake don't stink. I'm sick of how Hung is always right and EVERY SINGLE GUEST JUDGE is wrong, doesn't have vision, doesn't get it, etc, etc, ad nauseum. The sad thing is, I think Hung has made some of the best dishes on the show, but he just can't accept that his mis-fires are ... mis-fires. Well managed, Hung will be very successful.

CJ has been pretty middle of the road, not doing anything horrendously wrong, not doing anything particularly great. He seems to have a good attitude and a pretty easy-going manner so I think he'll make it to the end.

Brian seems a bit clueless to me. He doesn't seem aware of his own flaws, even when they're pointed out to him. He's done pretty well so far, but has been called out twice now, for service in the restaurant challenge, and now for leadership. Add to that his arrogant blunder in the American classics challenge (when he used lobster even though they said the dishes needed to be low cholesterol but he went for it because he had immunity), I think Brian will go soon.

Casey has kinda' been a mess. I like her spunk and attitude but she's made a LOT of blunders...just fortunately, others have blundered worse than her and she's been spared the ax. I like her though and if she can get through the next couple of challenges without making major screw ups, she has a good shot at the finals.

Sara was not a fave of mine. She seemed to be coasting but also hard nosed, bossy and opinionated. But it all came together when she showed her effective leadership in the last challenge, particularly where it came to Howie, who is difficult to manage, and I think she earned his respect. Then she made the call this ep to toss the mousse when it wasn't working, something the chefs are always chastised for NOT doing (if it doesn't work, don't serve it). I think Sara's got a spot in the finals.

So, I see as next to go: Brian or Casey (maybe...it's up to her)

Final four: Dale, CJ, Sara, Hung (like Marcel last season, they'll want the "villain" there until the end).

Final two: Tough call. Sara or CJ vs Dale or Hung

Winner: Sara. I think this show would love to crown a female Top Chef.

Thanks Kev....no worries though....I spoiled myself...I went to TV Guide on line and read all the episode blogs.....

Now my opinion is based on this person's blog review....but I can't understand why Hung is still there?? Sounds like he was and is an arrogant a$$.....

For those who don't want to know yet, close your eyes now!

CJ was sent home! Mess up one time in the competition and you are gone, gone, gone. I'm beginning to think I am going to be very, very unhappy with a Hung win. He seems to be getting better compliments from the judges. RATS!

I don't disagree that the broccoli looked very bad that CJ served. Fixing food for an airline seemed a bit unfair. How can you really be a chef with airline food. There are such limitations as they noted tonight with the sizing, the timing and the space. I didn't like the challenge at all. Probably because it ended with Cj going home. sigh.

Ok, on a positive note, I would have loved to be the taster for that breakfast quick fire. My but most of those breakfasts looked good. I am not sure I would have liked grand maraina(how do I spell that?) in a smoothie for breakfast but I would have tried it.

First Tre and now CJ. Who am I going to root for now.

I already know who I am rooting against.

SPOILER****************************************************

I'll miss CJ, too. I think he was the nicest and funniest person their if not the best chef.

I was really hoping that Hung would screw up somehow, but he didn't. As a judge, I would have kicked him off just for his stinky attitude.

I really came to depend on CJ's funny comments and facial expressions. He reminded me a little of Bill Murray, unfortunately this isn't Last Comic Standing.

I'd eat at Cj's reataurant because I like him; I'd avoid the veggies and the tuna dishes, of course.

Even if the food was earth-shakingly great, I would never eat at Hung's restaurant just because he's a jerk. I'm not giving him my money.

Right now, I'm pulling for Mr. Roosterhead (can't think of his name right now). He's been in the top a lot AND he's managed to be a nice person.

I still miss Tre. I will never miss Howie.

Isn't Howie usually a happy person's name?

Ditto on Howie and Hung. They are offering a contest for your favorite chef to come cook you a meal. I would love to have both CJ and Tre cooking with maybe Sarah and/or Casey also.

I fell asleep before the end......I'm so sorry it was CJ. First Tre, now CJ.....what are the judges thinking? How many times did Howie screw up before he was sent home? And I wonder if he would have gone last week if he hadn't volunteered. It would have probably been Brian.

Well, I guess now, I'm hoping for a Casey, Dale, Sarah, or Brian F2 or F3. I don't like how Hung has rebuked all of the judges when they don't like his dishes. He says they don't have 'vision'......maybe they don't like the TASTE!!!!!

Brian is a cutie, but he does seafood for everything.....even in his breakfast, he used lobster. Sarah is good, but she comes across as a little b!tchy. Dale has had some good dishes, but his mistakes have been huge. Casey has been all over the place. She really should have been the one to leave instead of Tre. But I like her.

Guess I'll vote for Tre and CJ as fan favorite.........

Compared to prior years, this cast leaves me cold. As far as leadership and food goes, I am rooting for Casey. Sara or Dale would be my second choice. Hung is an a** and Brian doesn't have what it takes to be a Top Chef IMHO.

I agree that this cast is not as good as the past 2 seasons. Actually, Season 1 has been the best. BL, did you get to Harold's restaurant while you were in NYC?

We did, but I can't find my own post.

The food was incredible. Harold was busy working the line on this particular Saturday evening instead working the front of the House. My son asked our server if we could give our compliments to Harold, server said sure but you will have to go into the kitchen, and we passed since it was obvious how busy he was.

The tab for the evening was $185 which included wine, a couple of mixed drinks, and dessert. Not outrageous for what we had.

http://www.perillanyc.com/pdf/dinner_menu.pdf

We had Beef Carpaccio that was incredible. My son had the lamb, and I had a fish special that was yummy. We had a side of Faro Risotto.

My but that menu looks very, very interesting. Some foods I don't recognize but lots of adventure available. I could see me happily munching on an appetizer--any of the fish dishes.the pea salad, the beef--plus a side dish for my meal. Exclude the raw fish from that list, I really tend to like my fish and meat cooked. Then return the next night and try to choose between the halibut, the skate wing, the lamb, the duck, the beef...sigh.

I remember many years ago on one of the Iron Chef programs they pulled a guy from the audience to sit and taste also. I have had fantasies of being able to just sit there and taste the entries prepared by the chefs in these contests!!! I'd love to sit through a challenge in to chef and get to taste the results. Although I have to say in the breakfast challenge, I really cannot eat an egg with a runny yolk. Really, my stomach just churns. So much for my palate.

I was also sad to see CJ go....I was hoping it would be Sara. I don't mind Hung as much as some of you guys do. He is arrogant to the judges, but he seems [mostly] okay with the other chefs.

I don't think Brian has what it takes. It would be cool if Casey could bring her A game so we could have a female winner. I like Dale too.

How in the world does Padma stay so thin?! She must have to live in the gym, or she is one of those lucky people with a great metabolism.

I would have a hard time being a "taster" on this show because I don't like seafood or any fish! And some of the crazy proteins they have cooked with like snake & sweetbreads would make me barf. I guess if you are a food critic or chef, you have to like EVERYTHING!

My observation is you can kind of be consistently mediocre on the show (see Brian) but you can't screw up TOO much on one challenge or you're gone (see Tre and CJ).

The final five (Casey, Hung, Sara, Brian & Dale) have all had their ups and downs but are still hanging on. We'll see who screws up NEXT week. After landing in the bottom AGAIN this week, I really think Brian is way over due to go home.

I'm glad Casey's been on an upswing...she really sparkles!

And I too don't have a problem with Hung. I'd like to see him take criticism a little better (it's never his fault, always the judges) but his cooking skills are strong.

And DAMN those breakfasts looked GOOD. I'd love to have been invited to THAT brunch!!

I just read in the paper that Season 2 Chef Josie Simth-Malave was beaten by attackers yelling anti-gay slurs after leaving a Sea Cliff, NY bar. She was with a small group of women who were asked to leave the bar over Labor Day weekend & then about 10 young people followed the women & began screaming anti-gay epithets, spitting on them, and then beating them. The small blurb did not say how she was doing.

What the hell is wrong with people?!

That's just appalling, but then when people hold men like ED as Heroes, what can we expect?

Wow that is terrible!!

I'm always a day behind in watching this show. I don't feel too much sadness about CJ leaving, altho i think he is a good guy.

Hung doesn't bother me to much, but I actually like Sara too. At this point there is no clear cut winner just yet.

Another good episode. I can understand why Sara went home. Dale's dish may have not been good, but Sara's could have been dangerous....if it really was undercooked, as Gail was the only one with that complaint.

I am sensing a Casey/Hung finale, but it looked like Hung, Brian, and Dale all had haircuts in some of the confessionals last night. I hope Casey can pull it out and become the first female winner.

I thought it was funny how the "undercooked chicken" progressed. When eating, Gail commented it was "undercooked". At judge's table, she escalated it to "almost raw". Then Padma upgrades it by saying "it was raw!" If the show went on any longer, someone would have been commenting that the chicken got up and walked off of Gail's plate...

Based on last night, the right person did go home and I wasn't expecting Sara in the finals, though she's really the only one who was a proven leader during the series.

Still shocked to see Brian hanging in...he's been below average most of the competition and his dish may have been good but it looked horrible. Shocked that there was no comment on presentation.

Hung is Hung, no getting around it, but he does have some amazing skills. I expected him in the finals and am not surprised to see him there.

I was also pretty much expecting Dale there and think he's earned his spot.

But I too am rooting for Casey. Great combo of skills, humility and enthusiasm. Would love to see her win and I'm sure the show is pulling for her too to crown their first female Top Chef! Go Casey!

You nailed it...Hung is just Hung and most of the time I can deal with his over-inflated ego, but when he cries to the judges that nobody helped him plate his dish, he makes my skin crawl. The man had an extra 1/2 hour. (I didn't even fault him while, during the quickfire, he didn't tell the other chefs how he made the potato thingy, why should he?) I don't know, I think I would be happy with any of the final 4 winning. I would prefer Casey/Dale, but eh, they are all good!

And Brian's mossy looking chicken, while maybe tasty to them, was so greeny looking it reminded me that I should have mowed my lawn.

Hard decision tonight. I'm not sure I agree but all of them made some errors and did some wonderful things with the food.

Tomorrow I'll mention names!

I think I'm the last time zone to watch, so I will name names!

I thought Casey was toast tonight with her undercooked dish but the sense that they wanted a woman in the finals came through and she made it. Yay! I hope she takes it all the way!

Brian was my prediction to not make the finals tonight (easy for me to say now, right?) and so it didn't bother me to see him go. I wasn't sure who the final two would be, had there been a final two, but I did expect that it would be made up of Hung, Casey and/or Dale. I would have gone out on a limb and said Hung vs. Casey because of the dramatic possibilities -- technical vs. heart, man vs. woman, etc., but I'm glad that Dale still has his shot. Hearing him say he was defeated when his dream job was Lost made me pull for him more.

But Casey all the way! I just like her!

I am still watching the espisode where the dessert (pineapple) people got called out for being lousy and that girl was sent home and Casey had immunity....Dale, Howie.....I forget the rest were in the bottom.....it was the challenge with teams of 3 had to create a flow to each of their dishes......it's funny to watch and then read what you guys are saying a few episodes ahead....it makes the show more interesting for me because I can watch their characters from s different perspective.....

One thing that was interesting this episode was they humanized Hung a bit. Hearing about his background and the passion he has made him more understandable. We may be looking at a Hung win. It was esp. interesting to hear how his father immigrated and then worked hard to bring his family over. I found myself thinking now that's the way immigration should be and look what has happened with the son, he's on a TV show where millions are watching him cook and he has this fantastic chance to achieve his dream and to show his father how well he has done with the hard work. It was a good move by the show to give us this information late in the season and change our feeling about Hung.

Yes, I was very sad to here Dale tell about what has happened to him this last year and how he was totally demoralized. But look at him now, he's definitely back in the saddle again. (cue western music)

Casey's dish did seem a bit weak, esp. after she said she had cooked elk before. But her trout in the quick fire sounded fantastic! What I am in awe of most is how these chefs can come up with a dish and get it prepared in under 30 minutes. It takes me hours to do the simplest things.

I'm thinking its a Hung win too, because they didn't really have any of the other contestants talking the same way. Or they are trying to surprise us with a Casey win.

Hung is an arrogant SOB....I just watched the episode where they made the lunch for the Telenouvella (sp?) cast & crew and they called Hung out for his poor dish...and he practically tore a trip off that french guest judge.....and Padma and the other guy had to put him in his place.....yes he is good....but that arrogance leaves a bad taste in my mouth.....go Casey or Dale!!! (even though I am not near the last episode yet.... )

First up in the audience, Hung's family and Marcel. Padma asks quietly, "Is Hung the next Top Chef?"

The 3 finalists are paired with famous chefs for their sous chefs.

Hung draws #1 and the chef is Rocco Dispirito, Casey draws #2 and her sous chef is Michelle Bernstein, finally Dale draws Todd English. All seem very pleased.

Rocco says in a confessional that Hung has too many flavors and Michelle disagrees with Casey's choice of fresh pork belly. "The more she adds, the more I wanted to subtract!"

Todd is enjoying just chopping and not thinking. Dale calls him his "chop b*tch." Todd in his confessional says that he's concerned that Dale's made things too complex.

The high altitude is screwing everyone up. Dale is not getting a rolling boil so his gnocchi is chewy. He quickly puts together some gnocchi for the freezedr.

Rocco is concerned that Hung isn't tasting his food.

Todd likes that Dale has gone with regional foods such as the Colorado Lamb.

Michelle is starting to meld with Casey and is hoping for good things for her to come together in the challenge.

Forgot to say that Hung's main dish is Duck.

More tease from Padma at the break as she introduces Casey's family and friends..."could she be the first female Top Chef?"

I am not sure if I like the pacing of this finale as much as the one from season one in Vegas cooking for the high rollers, etc.

Ah, one other thing I forgot to mention is that the 3 chefs are going head-to-head with their planned meal. Each will serve course one to the judges, followed by the second course, and then the third course.

Day 2 is on and the sous chefs are retired. The Top Chef finalists are on their own.

Hung worries about the fact that the judges don't think his food has soul. He says that he has soooooo much soul.

Casey says she has too much to do, but she's pushing through to complete it.

Hung states that he's doing fine without Rocco today.

Dale explains to Tom how much trouble he has had with his gnocchi at the high altitude.

Casey is having trouble with the time on her pork belly in the oven. Tom looks concerned.

Hung explains his dishes to Tom. Hung thinks that Tom gives him a "your nuts!" look as he is talking.

Tom takes the chefs outside to announce that they need to prepare a fourth course, on the fly.

The chefs look concerned and Tom says we have help....enter the eliminated chefs.

CJ, Howie, and Sara enter.

Hung doesn't want either Howie or CJ.

Casey chooses Howie

Dale draws CJ.

Hung decides to make a chocolate cake with raspberries.

Casey tells Howie they are going to make Colorado lamb for their fourth course then she changes to a beef.

Dale doesn't want to do a dessert. He decides to push his fourth course to the front of the menu. A scallop dish. CJ is going to run with it.

Casey looks up and notices they're down to 10 minutes. She's scrambling to plate her dishes. There is no time to adjust her presentation.

Finally, back at the live show Padma invites, "Will Dale be the next Top Chef?"

I think Dale had 2 of the 4 "best" dishes at the finale meal according to the judges commentary DURING the meal.

Judge's Table

Dale and Hung cooked as themselves. Casey found some things lacking.

The judge's call 2 of Dale's dishes " a triumph." Not so good on the lobster and gnocchi dish.

Casey has a load of excuses. Salmon roe ruined her foie gras. She claims the prawns were too big for the plate. She complains about the adding of the fourth dish. Her pork belly is dried out. Howie cooked her dish the judges liked.

Hung liked his first course. Judges wanted more acid. Gail calls the rice bland and need of more acid. Foie gras was 3-star Michelin. Judges call Hung on his decision to play it safe with the dessert.

2 courses to Hung, 2 courses to Dale

Dale's lobster is hurting him while respect given to consistency by Hung.

The ambition of Dale's Colorado Lamb is winning kudos while Hung's Duck is the winning dish. The judges are having a difficult time, but they've made their decision.

I won't question the people who ate the food since I am sure it was a difficult decision and it was a very close decision according to their commentary.

too bad casey faltered under the pressure, and her excuses might have hurt her chances.

Casey was a bit of a mess during and after the last challenge. Dale came on strong at the end, but a "bad" dish hurt him. Hung had a top dish and the others were good. I think Hung deserved to win. He can be a jerk sometimes, but you can't question his cooking skills and that's what the competition is about.

Agreed. The best chef won. Congrats to Hung!

Is this the season of the villain on reality TV? First Dick on Big Brother, now Hung (I know Hung isn't in the same vile league as Dick, just that they were both their shows' villain). So I guess Dave is going to win Survivor?

Dale's from Chicago. Classic misdirection or straight on clue?

I wasn't fooled!...

...because a few weeks ago in TV Guide there was an article about the next season being filmed...in Chicago!

Dale as a guest judge, anyone?

Just got finished watching tonights episode. I was hoping for a Dale win but I can be satisfied with Hung. Casey did not do well in this challenge. I wonder if the altitude affected her. She mentioned at the beginning it was hard for her to catch her breath but she did make a lot of excuses. I still would love to sit at one of these tables at a challenge and just taste these dishes. Heck, there are foods there I don't even know existed! Next week the reunion! We get to see Tre and CJ and what they are doing now, I hope!

Agreed...he was the best chef...but had the worst attitude...so for me....the best "person" didn't win.....should have been Dale or Casey......

Wow I can't believe how nerves got the best of Casey like that.

For me Dale was never in the running, because couldn't stand half of his dishes through the whole season & to me he just got lucky that others screwed up worse than him.

Wasn't exactly excited about Hung winning, but he deserved it.

I was glad Hung won. I know he had a few cases of being arrogant towards the judges. I guess he needs to work on taking criticsm....it has to be hard since food is subjective.

Hung was never mean to the others...he never said anything bad about anyone in confessionals. I think the other chefs get jealous of the really good chefs who are all about the food and aren't necessarily there to make friends & demonize them. It has happened every season...& esp. with Marcel last season.

I watched the reunion show last night and it was fun. The thing I disliked about Hung was he was never shown helping the others. You saw the other chefs help with plating and so forth but Hung was always shown standing around and watching. They did mention that he probably wouldn't win American's choice. I was very surprised to hear the judging took so long, the judges would debate for hours and hours before coming to a decision and the chefs had to remain in the "stew room" that entire time.

They did discuss the decision to cut Tre as it was noted many viewers were upset with that. Even Tre agreed that you make a bad dish and you are gone no matter what has happened before. The same think with CJ. It was a great show to see everyone so happy and laughing.

Oh and America's choice and winner of the $10,000......

not Tre

not CJ

it was Casey!

Can't say I agree with that decision but I didn't vote.

I assume it's payback for not winning the show despite winning all those challenges - people clearly wanted her to win.....like a Rupert sort of thing.....

She was there the longest of the women so it could have been a woman's vote. But I think if Tre or CJ had been in the top three and Lost, they would have gotten the money. Sigh......I'd still love to eat at a restaurant that Tre cooks in or even CJ. Oh they made fun of his height with lots of tapes showing him brushing the ceiling. He's 6 ft 7 in ! Padama (sp) said she enjoyed having him on the show because she could finally look up to a guy!

If you get a chance watch the reunion show. LOts of laughter and even some tears from.........the person you wouldn't associate with crying.
